Tried this eggnog recipe over the weekend. If you are a fan of eggnog this time of year (or any other time) and are looking for a much healthier version, I highly recommend this one. It is a vegan recipe from Cooking Light (which recently produced it’s last magazine) that uses just dates to sweeten. It does call for vanilla bean paste; I used just plain old vanilla extract and it worked fine. Enjoy!
