A different kind of breakfast food.

A couple of weeks ago I had breakfast at one of my favorite restaurants in Pacific Grove, CA. (Il Vecchio if you are in the area – highly recommended!! And I rarely find restaurants worthwhile). I ordered the “New Orleans” dish : savory ratatouille (eggplant, zucchini, peppers, red beans, potatoes, tomatoes) with 2 poached organic eggs (vegetarian).

It was amazing! The ratatouille was fantastic, and the eggs were delightful. I have not often, if ever had poached eggs. I don’t think I would be a big fan of them on their own, but they were great atop the lovely veggie dish.

Since then I have been playing with this idea at home. I am learning to make poached eggs – though so far they are nowhere near as lovely as the restaurant version – and I have enjoyed them atop a bean and veggie soup and a vegetable curry. Both have been a great way to start the day!

What people like for breakfast is very personalized, but we only know by trying it out and considering how much we like the taste, but also other factors such as prep time if running to work, and how we feel later in the day, particularly if it carries us through to lunchtime.

I’m happy to find this new way to breakfast with some leftovers under a couple of eggs!
