I made cookies using a technique that I have NEVER used before, nor would have ever thought of. The recipe calls for uncooked (but rinsed) quinoa. You blend it in a food processor, and then proceed to add other ingredients; but at least my version still maintained some very distinct quinoa pieces.
This recipe I tried is made mostly of quinoa and dates. I find the cookies too sweet with 1.5 cups of dates, which is about 1/2 of the overall volume. I am excited to continue experimenting with the new technique as a way to make a sweet treat that also contains some good nutrients. I will share if I come up with a modified recipe I prefer, though I definitely would recommend trying this one.
